Ingredients
  

  • Olive oil
  • Bell peppers
  • Onion
  • Chopped tomatoes
  • Spinach
  • Green olives
  • Eggs
  • Feta cheese

Instructions
 

Sauté Veggies

  • Slice onions and bell peppers. Cook in olive oil for 4–5 minutes until softened.

Add & Simmer

  • Stir in chopped tomatoes, spinach, and olives. Cook for 5 more minutes until spinach wilts.

Assemble

  • Transfer mixture to a greased baking dish. Crack 6 eggs over the top, spaced evenly.

Top & Bake

  • Sprinkle with crumbled feta, black pepper, and herbs. Bake at 180°C (356°F) for 15–18 minutes.

Serve

  • Let cool slightly and serve warm with crusty bread or pita.
