Ingredients
  

Pasta Salad:

  • 3 cups uncooked penne pasta
  • 8 oz salami diced (optional)
  • 2 cups kale finely chopped, stems removed
  • 1 cup grape or cherry tomatoes halved
  • 1/2 yellow bell pepper chopped
  • 1/4 cup red onion finely sliced
  • Salt & pepper to taste

Dressing:

  • 1/4 cup finely grated parmesan cheese
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 clove garlic minced
  • 1/4 tsp Italian seasoning
  • 1 tsp packed brown sugar

Instructions
 

Cook the Pasta:

  • Boil salted water and cook pasta al dente. Rinse under cold water and drain thoroughly.

Prep the Veggies & Kale:

  • Chop kale finely. Slice tomatoes, onion, and bell pepper. Dice salami (if using).

Make the Dressing:

  • In a jar, combine parmesan, red wine vinegar, olive oil, garlic, Italian seasoning, and brown sugar. Shake or whisk well.

Assemble the Salad:

  • In a large bowl, mix pasta, kale, veggies, and salami. Pour dressing over and toss until evenly coated.

Serve or Chill:
