Ingredients
  

  • 6 cups frozen cheese tortellini
  • 3 oz Genoa salami cut into matchsticks
  • 5 oz grape tomatoes halved
  • 2 oz sliced black or pearl olives
  • 1/3 cup red onion thinly sliced
  • 2/3 cup mozzarella cheese cubed
  • 1/2 cup robust Italian dressing like Wishbone Zesty Robusto
  • 2 –3 shakes balsamic vinegar adjust to taste

Instructions
 

Cook Tortellini:

  • Bring a large pot of salted water to a boil. Add frozen tortellini and cook until al dente (follow package time).
  • Drain and rinse immediately under cold water to stop further cooking. Let it cool.

Prep Ingredients:

  • While pasta cools, slice salami into matchsticks, halve the tomatoes, thinly slice red onion, cube the mozzarella, and drain olives.

Combine Ingredients:

  • In a large bowl, mix the tortellini with all the prepped ingredients. Pour in the Italian dressing and toss gently to coat evenly.

Add Vinegar:

  • Drizzle in 2–3 light shakes of balsamic vinegar. Toss again and adjust seasoning to taste.

Chill & Serve:

  • Cover and refrigerate for 1–2 hours before serving. For best flavor, chill overnight. Stir before serving and optionally add more dressing if desired.
