Ingredients
  

  • 2 cups chopped chicken
  • 1 cup chopped celery
  • 1 cup chopped apple
  • ½ cup toasted pecans
  • 1 tbsp lemon zest
  • 1 tbsp chopped parsley
  • 1 cup light mayonnaise
  • Salt and pepper to taste

Instructions
 

  • Prep all ingredients and toast pecans in a dry skillet.
  • In a large bowl, combine chicken, celery, apples, parsley, lemon zest, and pecans.
  • Add salt and pepper, then fold in mayo until fully coated.
  • Cover and refrigerate for at least 1 hour.
