Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • ¼ cup mayonnaise
  • ¼ cup avocado oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce or gluten-free tamari
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground black pepper
  • ¼ teaspoon cayenne pepper

Instructions
 

Prepare the Marinade

  • In a bowl, whisk together mayonnaise, avocado oil, Dijon mustard, soy sauce, thyme, salt, pepper, and cayenne.

Marinate the Chicken

  • Place the chicken in a zip-top bag or shallow container. Pour the marinade over the chicken, coat well, seal, and refrigerate for at least 4 hours or overnight.

Preheat the Blackstone Griddle

  • Heat the griddle to medium heat (about 350°F). Lightly oil the surface.

Cook the Chicken

  • Remove the chicken from the marinade and let the excess drip off.
  • Place the chicken on the hot griddle. Cook for 7 minutes on one side. Flip and cook for another 7–10 minutes, until internal temperature reaches 160°F.
