  • ½ tsp onion powder

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ cup grated Parmesan cheese

  • 1 tbsp chopped fresh parsley (for garnish)

For the Garlic Herb Sauce:

  • 3 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1 tbsp all-purpose flour (optional, for thicker sauce)

  • ½ cup chicken broth

  • ½ cup heavy cream

  • ¼ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1 tbsp chopped fresh parsley

  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Lightly grease a large sheet pan with olive oil or non-stick spray.

  2. Prepare the Potatoes:
    In a large bowl, toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread them evenly on half of the pan.

  3. Season the Chicken:
    Pat chicken dry with paper towels. Brush with melted butter and sprinkle both sides with salt, pepper, onion powder, and a little paprika. Place on the other half of the pan beside the potatoes.

  4. Roast Everything:
    Bake for 25–30 minutes, flipping halfway through, until the chicken is cooked through (165°F internal temperature) and the potatoes are golden and crispy.

  5. Make the Garlic Herb Sauce:
    In a small saucepan, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Stir in flour (if using), then slowly add broth and cream, whisking until smooth. Add Parmesan, Italian seasoning, and parsley. Simmer 2–3 minutes until slightly thickened.

  6. Combine & Serve:
    Pour the warm garlic herb sauce over the roasted chicken and potatoes. Toss gently to coat. Garnish with extra Parmesan and chopped parsley before serving.
