  • ½ cup shredded sharp cheddar cheese (reserve ¼ cup for topping)

  • 8 strips thick-cut bacon, crisped and chopped

  • ¼ cup green onions, thinly sliced

  • Salt & pepper, to taste

Instructions

Step 1: Preheat and prep
Preheat your oven to 350°F (175°C / Gas Mark 4).
Lightly grease a baking dish with oil or nonstick spray.

Step 2: Prepare the chicken
Rinse and pat dry chicken breasts. Trim any fat.
If thick, butterfly or pound to even thickness.
Season both sides with salt and pepper, then place in the baking dish in a single layer.

Step 3: Make the cheese topping
In a medium bowl, mix softened cream cheese, mayonnaise, mozzarella, ¼ cup cheddar, chopped bacon, green onions, salt, and pepper until smooth and creamy.

Step 4: Assemble
Spread the cheese mixture evenly over the chicken breasts.
Top with the remaining ¼ cup cheddar.

Step 5: Bake
Bake uncovered for 30–40 minutes, or until the internal temperature reaches 165°F (74°C).

Step 6: Rest and serve
Remove from the oven and let rest for 5 minutes.
Garnish with extra green onions or bacon if desired.
