Chicken & Pasta

  • pounds boneless (skinless chicken breasts, cut into 1-inch cubes)
  • 10 ounces penne pasta
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Creamy Sauce

  • 3 tablespoons butter
  • 2 teaspoons garlic (minced)
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup sun-dried tomatoes (drained)
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • Salt & pepper (to taste)
  • Fresh basil leaves (chopped (for garnish))

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to the package directions until al dente. Drain and set aside.

Step 2: Prepare the Chicken

  1. Season the chicken pieces with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6–8 minutes, stirring occasionally, until fully cooked and golden brown. Remove from the pan and set aside.

Step 3: Make the Sauce

  1. In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Stir in the flour and cook for 1 minute to form a roux.
  2. Slowly whisk in the chicken broth and heavy cream until smooth. Add the grated Parmesan cheese and stir until melted and creamy.
  3. Mix in the sun-dried tomatoes, paprika, and Italian seasoning. Let the sauce simmer for a few minutes until slightly thickened. Adjust salt and pepper to taste.

Step 4: Combine Everything

  1. Return the cooked chicken to the skillet, followed by the cooked pasta. Toss everything together until well coated in the creamy sauce and heated through.

Step 5: Garnish & Serve

  1. Top with freshly chopped basil and extra Parmesan cheese if desired. Serve immediately and enjoy every comforting bite!
