Chicken & Pasta
- 1½ pounds boneless (skinless chicken breasts, cut into 1-inch cubes)
- 10 ounces penne pasta
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
Creamy Sauce
- 3 tablespoons butter
- 2 teaspoons garlic (minced)
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup sun-dried tomatoes (drained)
- 1 teaspoon paprika
- 2 teaspoons dried Italian seasoning
- Salt & pepper (to taste)
- Fresh basil leaves (chopped (for garnish))
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Cook the penne pasta according to the package directions until al dente. Drain and set aside.
Step 2: Prepare the Chicken
- Season the chicken pieces with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6–8 minutes, stirring occasionally, until fully cooked and golden brown. Remove from the pan and set aside.
Step 3: Make the Sauce
- In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Stir in the flour and cook for 1 minute to form a roux.
- Slowly whisk in the chicken broth and heavy cream until smooth. Add the grated Parmesan cheese and stir until melted and creamy.
- Mix in the sun-dried tomatoes, paprika, and Italian seasoning. Let the sauce simmer for a few minutes until slightly thickened. Adjust salt and pepper to taste.
Step 4: Combine Everything
- Return the cooked chicken to the skillet, followed by the cooked pasta. Toss everything together until well coated in the creamy sauce and heated through.
Step 5: Garnish & Serve
- Top with freshly chopped basil and extra Parmesan cheese if desired. Serve immediately and enjoy every comforting bite!
