Ingredients
- Olive oil
- Bell peppers
- Onion
- Chopped tomatoes
- Spinach
- Green olives
- Eggs
- Feta cheese
Instructions
Sauté Veggies
- Slice onions and bell peppers. Cook in olive oil for 4–5 minutes until softened.
Add & Simmer
- Stir in chopped tomatoes, spinach, and olives. Cook for 5 more minutes until spinach wilts.
Assemble
- Transfer mixture to a greased baking dish. Crack 6 eggs over the top, spaced evenly.
Top & Bake
- Sprinkle with crumbled feta, black pepper, and herbs. Bake at 180°C (356°F) for 15–18 minutes.
Serve
- Let cool slightly and serve warm with crusty bread or pita.
