Ingredients
For the Chicken:
- 1½ lbs boneless (skinless chicken breast (cut into bite-sized pieces))
- 2 tbsp olive oil
- ½ tsp black pepper
- ½ tsp Italian seasoning
- ½ tsp paprika
For the Sauce:
- 2 tbsp butter
- 3 tsp garlic (minced)
- ½ cup sun-dried tomatoes in oil (drained and sliced)
- 1 cup low-sodium chicken broth
- 2 cups heavy cream
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1 tsp black pepper
- 1 cup freshly grated parmesan cheese
- 2 cups baby spinach (chopped)
For the Pasta:
- 1 19 oz bag frozen cheese tortellini (pre-boiled until just tender)

- Chopped parsley
- Extra grated parmesan
Instructions
Step 1 – Cook the Chicken
- In a bowl, season chicken with black pepper, paprika, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until golden brown and fully cooked (6–8 minutes).
- Remove from skillet and set aside.
Step 2 – Build the Sauce
- Lower heat to medium-low. Melt butter in the same skillet.
- Add garlic and sun-dried tomatoes. Sauté for 30 seconds until fragrant.
- Pour in chicken broth, heavy cream, Italian seasoning, black pepper, and paprika.
- Stir and let it simmer gently. Slowly whisk in parmesan cheese until melted and smooth.
Step 3 – Combine Everything
- Add cooked chicken, baby spinach, and pre-cooked tortellini into the sauce.
- Stir gently and let simmer for 5 minutes, until spinach wilts and pasta is heated through.
- Turn off heat and let rest for 2 minutes to thicken the sauce.
Step 4 – Serve and Enjoy
- Garnish with parsley and more parmesan if desired.
- Serve warm with garlic bread or salad on the side.
