  • Total Time: 35 minutes
  • Yield: 4

Ingredients

Scale

For the Chicken:

  • lbs boneless (skinless chicken breast (cut into bite-sized pieces))
  • 2 tbsp olive oil
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ½ tsp paprika

For the Sauce:

  • 2 tbsp butter
  • 3 tsp garlic (minced)
  • ½ cup sun-dried tomatoes in oil (drained and sliced)
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 cup freshly grated parmesan cheese
  • 2 cups baby spinach (chopped)

For the Pasta:

  • 1 19 oz bag frozen cheese tortellini (pre-boiled until just tender)
  • Garnish (Optional:)
  • Chopped parsley
  • Extra grated parmesan

Instructions

Step 1 – Cook the Chicken

  1. In a bowl, season chicken with black pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook until golden brown and fully cooked (6–8 minutes).
  4. Remove from skillet and set aside.

Step 2 – Build the Sauce

  1. Lower heat to medium-low. Melt butter in the same skillet.
  2. Add garlic and sun-dried tomatoes. Sauté for 30 seconds until fragrant.
  3. Pour in chicken broth, heavy cream, Italian seasoning, black pepper, and paprika.
  4. Stir and let it simmer gently. Slowly whisk in parmesan cheese until melted and smooth.

Step 3 – Combine Everything

  1. Add cooked chicken, baby spinach, and pre-cooked tortellini into the sauce.
  2. Stir gently and let simmer for 5 minutes, until spinach wilts and pasta is heated through.
  3. Turn off heat and let rest for 2 minutes to thicken the sauce.

Step 4 – Serve and Enjoy

  1. Garnish with parsley and more parmesan if desired.
  2. Serve warm with garlic bread or salad on the side.
  3. Pro Tips:
  4. Use fresh grated parmesan for the smoothest sauce.
  5. Don’t overcook tortellini—undercook slightly to prevent mushiness.
  6. Add red pepper flakes for heat or mushrooms for a vegetarian boost.
