Ingredients

Pasta Salad:

  • 3 cups uncooked penne pasta
  • 8 oz salami (diced (optional))
  • 2 cups kale (finely chopped, stems removed)
  • 1 cup grape or cherry tomatoes (halved)
  • 1/2 yellow bell pepper (chopped)
  • 1/4 cup red onion (finely sliced)
  • Salt & pepper (to taste)

Dressing:

  • 1/4 cup finely grated parmesan cheese
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 clove garlic (minced)
  • 1/4 tsp Italian seasoning
  • 1 tsp packed brown sugar

Instructions

Cook the Pasta:

  1. Boil salted water and cook pasta al dente. Rinse under cold water and drain thoroughly.

Prep the Veggies & Kale:

  1. Chop kale finely. Slice tomatoes, onion, and bell pepper. Dice salami (if using).

Make the Dressing:

  1. In a jar, combine parmesan, red wine vinegar, olive oil, garlic, Italian seasoning, and brown sugar. Shake or whisk well.

Assemble the Salad:
