Ingredients
Scale
Pasta Salad:
- 3 cups uncooked penne pasta
- 8 oz salami (diced (optional))
- 2 cups kale (finely chopped, stems removed)
- 1 cup grape or cherry tomatoes (halved)
- 1/2 yellow bell pepper (chopped)
- 1/4 cup red onion (finely sliced)
- Salt & pepper (to taste)
Dressing:
- 1/4 cup finely grated parmesan cheese
- 2 tbsp red wine vinegar
- 3 tbsp olive oil
- 1 clove garlic (minced)
- 1/4 tsp Italian seasoning
- 1 tsp packed brown sugar
Instructions
Cook the Pasta:
- Boil salted water and cook pasta al dente. Rinse under cold water and drain thoroughly.
Prep the Veggies & Kale:
- Chop kale finely. Slice tomatoes, onion, and bell pepper. Dice salami (if using).
Make the Dressing:
- In a jar, combine parmesan, red wine vinegar, olive oil, garlic, Italian seasoning, and brown sugar. Shake or whisk well.
Assemble the Salad:
- In a large bowl, mix pasta, kale, veggies, and salami. Pour dressing over and toss until evenly coated.
Serve or Chill:
- Serve immediately or chill for 1–2 hours. Flavor deepens as it rests.
