  • 1 tablespoon (15ml) lemon juice

  • 1/2 teaspoon vanilla extract

For the Crumb Topping

  • 1/2 cup (60g) all-purpose flour

  • 1/4 cup (50g) granulated sugar

  • 1/4 cup (50g) brown sugar, packed

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1/4 cup (57g) unsalted butter, melted

Instructions

  1. Preheat Oven – Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang for easy lifting later.

  2. Prepare the Crust – In a medium bowl, mix flour, sugar, and salt. Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs. Press evenly into prepared pan. Bake for 15–18 minutes, or until lightly golden.

  3. Make the Filling – In a large bowl, combine sliced peaches, sugar, flour, lemon juice, and vanilla extract. Toss gently to coat.

  4. Make the Crumb Topping – In another bowl, mix flour, granulated sugar, brown sugar, cinnamon, and salt. Stir in melted butter until crumbly.

  5. Assemble the Bars – Spread peach filling evenly over pre-baked crust. Sprinkle crumb topping evenly over peaches.

  6. Bake – Bake for 45–50 minutes, or until topping is golden brown and filling is bubbling.

  7. Cool & Serve – Cool completely in the pan on a wire rack. Lift out using parchment paper, cut into squares, and serve. Optional: Dust with powdered sugar or pair with vanilla ice cream.
