For the Crumb Topping

1/4 cup (57g) unsalted butter, melted
Instructions

Preheat Oven – Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang for easy lifting later.

Prepare the Crust – In a medium bowl, mix flour, sugar, and salt. Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs. Press evenly into prepared pan. Bake for 15–18 minutes, or until lightly golden.

Make the Filling – In a large bowl, combine sliced peaches, sugar, flour, lemon juice, and vanilla extract. Toss gently to coat.

Make the Crumb Topping – In another bowl, mix flour, granulated sugar, brown sugar, cinnamon, and salt. Stir in melted butter until crumbly.

Assemble the Bars – Spread peach filling evenly over pre-baked crust. Sprinkle crumb topping evenly over peaches.

Bake – Bake for 45–50 minutes, or until topping is golden brown and filling is bubbling.
