- 1 cup natural peanut butter
- 1/2 cup honey or maple syrup
- 1 egg
- 1 tsp baking soda
- 1/2 tsp vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the peanut butter, honey or maple syrup, egg, baking soda, vanilla extract, and salt. Mix until smooth.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball gently with a fork in a crisscross pattern.
- Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store the cookies in an airtight container at room temperature for up to one week. For longer storage, refrigerate them for up to two weeks or freeze for up to three months. You can customize with chocolate chips or nuts.
