Ingredients
- ⅓ cup red onion
- ¼ cup extra-virgin olive oil
- 1½ tsp red wine vinegar
- 1½ tsp dried oregano
- 2 –3 English cucumbers
- 1 cup Greek yogurt (full-fat)
- 1 Tbsp lemon juice
- 1 garlic clove
- ¼ cup fresh dill
- 1 tsp kosher salt
- Black pepper to taste
Instructions
- Marinate onions in olive oil, vinegar, and oregano.
- Slice cucumbers and prep yogurt dressing.
- Combine all ingredients.
- Chill 30 minutes.
- Serve cold.
