  • 1 cup Genoa salami (sliced into strips)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (finely diced)
  • 1/2 cup black olives (sliced)
  • 1 cup mozzarella pearls (halved)
  • 1/2 cup zesty Italian dressing (plus more as needed)
  • 1 tbsp balsamic vinegar (optional, for depth)
  • 1/4 cup chopped fresh parsley or basil (optional)

Instructions

  1. Boil Tortellini: Bring salted water to a boil. Cook tortellini per package directions (3–5 minutes) until al dente. Drain and rinse under cold water.
  2. Prep Ingredients: While the pasta cools, slice salami, halve tomatoes and mozzarella, and chop onions and olives.
  3. Mix: In a large bowl, combine tortellini, salami, tomatoes, onion, olives, and mozzarella.
  4. Dress: Add half the Italian dressing and toss gently to coat. Add balsamic vinegar if desired.
  5. Chill: Cover and refrigerate for at least 1 hour to let flavors meld.
  6. Finish & Serve: Before serving, add the remaining dressing and toss lightly. Garnish with fresh herbs. Serve cold.
