Ingredients
- 2 cups shredded chicken
- 1 apple (chopped)
- ½ cup toasted walnuts
- ½ cup Greek yogurt
- 1 tbsp lemon juice
- 2 celery stalks (chopped)
- ¼ red onion (diced)
- 2 –3 Medjool dates (chopped)
- ½ tsp chopped rosemary
- Salt and pepper to taste
Instructions
- Toast walnuts in skillet and set aside.
- Mix Greek yogurt, lemon juice, rosemary, salt, and pepper in a large bowl.
- Add chicken and mix well.
- Fold in apple, celery, onion, dates, and walnuts.
- Chill 15–30 minutes before serving.
