Ingredients
- 2 cups chopped chicken
- 1 cup chopped celery
- 1 cup chopped apple
- ½ cup toasted pecans
- 1 tbsp lemon zest
- 1 tbsp chopped parsley
- 1 cup light mayonnaise
- Salt and pepper to taste
Instructions
- Prep all ingredients and toast pecans in a dry skillet.
- In a large bowl, combine chicken, celery, apples, parsley, lemon zest, and pecans.
- Add salt and pepper, then fold in mayo until fully coated.
- Cover and refrigerate for at least 1 hour.
- Serve chilled on a croissant, in lettuce wraps, or over greens.
Notes:
- Use rotisserie or baked chicken.
- Mix in grapes or cranberries for variation.
- Substitute Greek yogurt for a lighter version.
