- 2 lbs boneless (skinless chicken breasts)
- ¼ cup mayonnaise
- ¼ cup avocado oil
- 1 tablespoon Dijon mustard
- 1 tablespoon soy sauce (or gluten-free tamari)
- 1 teaspoon dried thyme
- 1 teaspoon sea salt
- ½ teaspoon fresh ground black pepper
- ¼ teaspoon cayenne pepper
Instructions
Prepare the Marinade
- In a bowl, whisk together mayonnaise, avocado oil, Dijon mustard, soy sauce, thyme, salt, pepper, and cayenne.
Marinate the Chicken
- Place the chicken in a zip-top bag or shallow container. Pour the marinade over the chicken, coat well, seal, and refrigerate for at least 4 hours or overnight.
Preheat the Blackstone Griddle
- Heat the griddle to medium heat (about 350°F). Lightly oil the surface.
Cook the Chicken
- Remove the chicken from the marinade and let the excess drip off.
- Place the chicken on the hot griddle. Cook for 7 minutes on one side. Flip and cook for another 7–10 minutes, until internal temperature reaches 160°F.
Rest & Serve
- Transfer to a plate, tent with foil, and let rest 5–10 minutes before slicing. Serve hot with your favorite sides.
